The Best Buttermilk Pancakes

3 cups AP flour

4 tablespoons sugar

5 teaspoons baking powder

1 teaspoon salt

1 ¾ cups buttermilk

1 ¼ cups milk

2 eggs

1 teaspoon vanilla

 

Mix dry ingredients.  Stir in remaining ingredients until just combined.  Drop onto hot griddle and cook until edges are dry and bubbles appear in middle, then flip.  Note:  These puff up and take slightly longer to cook than other recipes.
